Pumpkin soup

Hi Everybody

recently I told you about my "big" pumpkin harvest. Here's the first product that I've made from the pumpkins. Super yummy pumpkin soup, according to my mom's recipe.

If you'd like to cook at it, here is the recipe:

Ingredients (about 4 servings)
2          small leeks
60 g     butter
500 g   pumpkin (peeled and diced)
300 g   potatoes (peeled and diced)
¼ ltr.    water
¼ ltr.    milk (whether 3.5% or 1.5%)
1 pack creme fraîche
            salt and pepper
1 pack cooked ham

Preparation
Peel, dice and wash the pumpkin and the potatoes and set aside.

Cut and wash leeks. In the meantime, heat the butter in a large pot. Sauté the leeks in the butter. Add milk and water and bring it to boil.

Put in the pumpkin and potato pieces and cook until everything is soft (about 30 minutes). Remove the pot from the heat and puree everything. (Side note: Pay attention! Puree could be a total mess.) Finally, stir in the creme fraîche and season with salt and pepper to taste.

Dice the ham and spread it on your plate, fill the soup over and enjoy.

Till next time
